Ingredients

  • 1 kg boneless smoked ham Fortin or similar
  • 1 400g can pineapple rings drained, reserve juice
  • 1 can canned cherries, drained
  • ½ cup brown sugar
  • ¼ cup honey or maple syrup
  • ¼ cup Dijon mustard
  • ¼ cup apple cider vinegar
  • ¾ cup reserved pineapple juice
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp ground ginger
  • 2 tbsp butter
  • Salt & white pepper to taste
  • Garlic optional

Instructions

  • Preheat your oven to 325°F (160°C).
  • If the smoked ham has a skin or fat layer, score it in a criss-cross pattern, but don’t remove it.
  • Place the ham in a roasting pan lined with foil.
  • In a small saucepan, combine brown sugar, honey, Dijon mustard, apple cider vinegar, pineapple juice, cinnamon, cloves, and ginger.
  • Heat over medium, stirring until the sugar has dissolved and the glaze is smooth.
  • Add the butter and continue to cook for 1-2 more minutes until the butter melts and the glaze thickens slightly.
  • Brush a generous amount of the glaze over the surface of the ham.
  • Carefully arrange the pineapple rings on top of the ham, securing them with toothpicks if necessary.
  • Place cherry halves inside and around the pineapple rings, making sure they are evenly distributed.
  • Drizzle more glaze over the fruit and ham to coat.
  • Tent the ham with foil and roast it in the preheated oven for about 1 hour, basting every 20 minutes with the remaining glaze.
  • In the last 20 minutes, remove the foil to allow the ham and fruit to caramelize.
  • Once the ham reaches an internal temperature of 150°F (65°C ) and is beautifully glazed, remove it from the oven.
  • Let it rest for 10 minutes before slicing.
  • Serve warm, garnished with the caramelized pineapple and cherries.
