
Basil Pesto Burrata & Roasted Cherry Tomatoes
There’s something magical about roasted tomatoes, bursting with sweetness, caramelized to perfection, and soaking up all that garlicky olive oil. Now add creamy burrata, a swirl of basil pesto, and a drizzle of balsamic glaze for the perfect balance of richness and tang. Serve it with toasted bread for an irresistible appetizer, or toss it over pasta, spaghetti squash, or even grilled chicken for a simple, flavour-packed meal.
Ingredients
- 4 cups cherry or grape tomatoes
- ¼ cup olive oil
- 4-6 cloves garlic (sliced)
- Pinch of crushed red pepper flakes
- Kosher salt and black pepper (to taste)
- 8 oz burrata cheese
- 2-3 tbsp basil pesto
- balsamic glaze (for drizzling)
- Fresh basil or chives (for garnish)
- Crushed red pepper flakes (for garnish, optional)
- Toasted bread or pasta (for serving)
- Roasted garlic (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a 9×13-inch baking dish, toss the tomatoes with olive oil, garlic, red pepper flakes, salt, and black pepper.
- Roast for 30–35 minutes, until the tomatoes burst and caramelize slightly.
- Remove from the oven, transfer to a plate and place the burrata in the middle of the warm tomatoes. optionally you can break apart the burrata immediately over the roasted tomatoes.
- Drizzle with basil pesto and, a touch of balsamic glaze (if using) for extra depth.
- Garnish with fresh basil or chives and extra red pepper flakes, if desired.
- Serve immediately with toasted bread, or pasta.
Notes
- Optional Sweetness: Sprinkle a small amount of sugar over the tomatoes before roasting to enhance their natural sweetness, especially if they’re slightly tart.
- Lower-Carb Option: Serve over spaghetti squash, zoodles, or creamy polenta instead of bread or pasta.
- Extra Flavour Boost: Roasted garlic adds a rich, slightly sweet depth, mash it into the tomatoes before serving.
- Balsamic Drizzle: A touch of balsamic reduction enhances the dish with acidity and sweetness.
- Burratini Instead of Burrata: For individual servings, swap the large burrata for 3–6 Burratini (one per serving). Keep the same amount of tomatoes and drizzle each portion with pesto and balsamic glaze for a beautifully plated dish.
