
Chicken Fajitas

Ingredients
Chicken Marinade
- 1 ½ lbs boneless skinless chicken breasts or thighs, sliced into strips
- 3 tbsp lime juice freshly squeezed
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp chili powder
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
Fajitas
- 2 tbsp olive oil
- 1 large onion thinly sliced
- 1 red bell pepper thinly sliced
- 1 yellow bell pepper thinly sliced
- 1 green bell pepper thinly sliced
- 8 small flour or corn tortillas warmed
Optional Toppings
- Fresh cilantro chopped
- Lime wedges
- Sliced avocado or guacamole see below for recipe
- Salsa or pico de gallo see recipe below
- Sour cream or Mexican crema
Instructions
- In a bowl, whisk together lime juice, olive oil, garlic, and all the seasonings.
- Add the sliced chicken, toss to coat, and marinate for at least 30 minutes (or up to 2 hours for deeper flavor).
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked and slightly charred.
- Remove the chicken from the pan and set aside.
- In the same pan, add the remaining 1 tbsp olive oil.
- Add the sliced onions and bell peppers, cooking for 5-7 minutes until softened but still slightly crisp.
- Return the cooked chicken to the pan and toss with the sautéed veggies.
- Serve immediately with warm tortillas and your choice of toppings.
Notes
- Tortilla Choice: Use flour tortillas for a softer wrap or corn tortillas for a more traditional texture.
- Charred Flavour: For an authentic touch, cook the chicken and veggies on a cast-iron skillet or grill for a smoky char.
- Make it Spicier: Add sliced jalapeños or a pinch of cayenne to the marinade.
