
Cilantro Lime Pesto
This vibrant cilantro lime pesto puts a refreshing twist on the classic. Packed with the bold flavours of fresh cilantro and the zesty brightness of lime, it adds a lively kick to pasta, sandwiches, salads, and more. A versatile, flavourful topping that brings a burst of freshness to any dish!
Ingredients
- 2 cups fresh cilantro leaves packed
- ½ cup sunflower seeds
- 3 cloves garlic (peeled)
- 2 limes (Zested and juiced)
- ½ cup grated Parmesan cheese (optional, omit for vegan version)
- ½ cup extra virgin olive oil
- ⅛-¼ cup white wine vinegar
- Salt and pepper (to taste)
Instructions
- In a food processor, combine the cilantro leaves, sunflower seeds, garlic, lime zest, lime juice, white wine vinegar and Parmesan cheese (if using). Pulse until the ingredients are finely chopped and well combined.
- With the food processor running, slowly drizzle in the olive oil until the mixture forms a smooth paste. You may need to stop and scrape down the sides of the bowl with a spatula to ensure everything is incorporated. (see note #1.)
- Taste the pesto and season with salt and pepper to taste.
- Transfer the pesto to a jar or airtight container and store it in the refrigerator until ready to use.
- Serve the lime cilantro pesto with pasta, spread it on sandwiches or wraps, use it as a marinade for grilled meats or vegetables, or drizzle it over roasted potatoes or grilled seafood.
Notes
- Consistency Adjustment: If the cilantro lime pesto is too thick, you can adjust the consistency by adding more olive oil, a little at a time, until it reaches your desired texture.
- Storage Tip: To prevent the pesto from turning brown, drizzle a thin layer of olive oil over the surface before storing it in the fridge or freezer.
- Refrigeration: Store the cilantro lime pesto in an airtight container in the refrigerator for 5 to 7 days.
- Freezing: For longer storage, you can freeze the cilantro lime pesto in an airtight container or ice cube tray for up to 3 months. If freezing in an ice cube tray, transfer the frozen cubes to a freezer-safe bag or container once solidified. *The colour may change slightly after freezing, but the pesto will still be good to use.
- Thawing: To use frozen pesto, simply thaw in the refrigerator overnight.
- Serving Suggestion: This cilantro lime pesto is perfect as a topping for grilled meats, roasted vegetables, or tossed with pasta, rice, or quinoa. It also makes a great spread for sandwiches or wraps.
