Classic Caesar Dressing

Ingredients
  

  • ¼ cup lemon juice
  • 2 egg yolks see not #1.
  • cup extra virgin olive oil
  • 2-3 cloves garlic minced
  • 1 tsp Dijon mustard
  • 1 tsp anchovy paste or 1-2 filets minced
  • 1-2 tsp Worcestershire
  • ¼ cup parmesan finely grated
  • Salt & pepper to taste

Instructions
 

  • In a small bowl, whisk together the egg yolk, garlic, anchovy paste, Dijon mustard, and Worcestershire sauce until well combined.
  • Add the lemon juice and whisk until fully incorporated.
  • Slowly drizzle in the olive oil while continuously whisking until the dressing is emulsified and smooth. (see note #2)
  • Stir in the grated Parmesan cheese.
  • Season to taste with salt and pepper.
  • Add the Caesar dressing to your choice of salad, toss well, and serve.

Notes

Try it with Roasted Brussels Sprouts Caesar Salad
  • Mayonnaise Variation: Replace the oil and egg yolk with ¼ cup of mayonnaise for a simplified version of Caesar dressing. Mayonnaise already contains oil and eggs, making it a quick alternative while maintaining the creamy texture and classic flavour. 
  • Emulsification Tips: To ensure the dressing emulsifies properly, add olive oil very slowly while whisking continuously. This creates a smooth, creamy texture. Alternatively, place all ingredients (except Parmesan cheese) in a jar and shake vigorously until emulsified. Stir in Parmesan cheese at the end for the best texture.
  • Flavour Enhancements: Add 1-2 teaspoons of minced capers for a tangy flavour that complements the dressing without overpowering it.
  • Anchovy Substitute: If you don’t have anchovies or prefer not to use them, substitute with 1-2 teaspoons of Worcestershire sauce for a similar umami flavour
  • Garlic: For a milder garlic flavor, roast the garlic before adding it to the dressing. For a bolder flavour, use fresh minced garlic or turn it into a paste with a pinch of salt.
  • Adjusting Consistency: If the dressing is too thick, thin it out with a little water, additional lemon juice, or olive oil, depending on your taste preference.
  • Making it Vegan: Replace the anchovies with miso paste or capers, and use a vegan mayonnaise or plant-based oil. Substitute Parmesan with nutritional yeast or a vegan cheese.
  • Serving Suggestions: Caesar dressing isn’t just for salads—use it as a dip for vegetables, a spread for sandwiches, or a drizzle over roasted vegetables or grilled chicken.
  • Storage: Store Caesar dressing in an airtight container in the refrigerator for up to one week. After refrigerating, allow dressing to come to room temperature before serving. Shake or whisk well to re-emulsify if separation occurs.
