Honey Buffalo Cauliflower Bites

These Honey Buffalo Cauliflower Bites are the perfect balance of crispy, spicy, and sweet. Coated in a light, crunchy beer batter and tossed in a flavourful honey buffalo sauce, they’re totally addictive! Who needs chicken when you’ve got these crispy little bites? Whether you’re snacking or serving them as an appetizer, they’re guaranteed to disappear fast. Bonus points if you’ve got blue cheese or ranch on the side!

Ingredients
  

  • 1 cauliflower cut into bite-size pieces
  • ¾-1 cup plain flour
  • 1 tsp smoked paprika
  • 2 tsp garlic powder
  • beer for a crispy beer batter
  • ½ cup hot sauce I use Frank’s RedHot
  • 1½-2 tbsp butter
  • 1 tbsp honey add .5-1 tbsp more if you prefer a sweeter taste
  • cups Vegetable or Canola oil For frying
  • Blue cheese or ranch dressing for dipping

Instructions
 

  • Cut the cauliflower into bite-size pieces.
  • In a bowl, mix the plain flour, smoked paprika, and garlic powder. Whisk in the beer until smooth to create your beer batter.
  • Heat oil in a deep pan or fryer to 180°C (350°F). Dip each cauliflower piece into the batter to coat it evenly, then fry in batches until golden and crispy, about 3-4 minutes. Remove and drain on paper towels.
  • In a pan, combine the hot sauce, butter, honey, and a pinch of salt and pepper. Bring it to a boil, then let it simmer for 2 minutes. Taste and adjust the seasoning as needed, then set aside.
  • Once the cauliflower is fried, coat it in the honey buffalo sauce. Serve with blue cheese or ranch dressing on the side.

Notes

Non-Alcoholic Beer Alternative: Use non-alcoholic beer or sparkling water in place of the beer for the batter. This will still give you a crispy texture without the alcohol.
Spice Level: If you prefer a milder buffalo sauce, you can reduce the amount of hot sauce.
Vegan Option: For a vegan version, swap the butter for vegan butter or olive oil, and use a dairy-free sour cream and mayo for dipping.
Baking Option: If you prefer a lighter, oil-free version, you can bake the cauliflower instead of frying. After coating the cauliflower in the beer batter, place the pieces on a lined baking sheet. Bake at 450°F (230°C) for about 20 minutes, or until golden and crispy, flipping halfway through. While it won’t have the same deep-fried crunch, it’s still delicious and a healthier option!
Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the oven to keep the cauliflower crispy.
