
Loaded Smash & Crunch Burgers
These Smash & Crunch Burgers are everything you crave in a burger—juicy, flavourful, and packed with texture. Seasoned ground beef is smashed for a perfect crust, then layered with crispy prosciutto, sautéed mushrooms, smoked gouda, and a tangy homemade roasted garlic mayo. Topped with fresh cilantro, crunchy cucumbers, and red onion, these burgers area delicious mix of savory, smoky, and bright flavours. Quick to make and guaranteed to impress!

- For the Burgers:
- 1 lb ground beef
- 1-2 shallots minced
- Salt and pepper to taste
- 4 burger buns toasted
- Cucumber or pickle slices
- Fresh cilantro leaves stems removed
- Red onion thinly sliced
- 4 slices smoked gouda
- Mushrooms thinly sliced
- Fresh thyme and rosemary
- Prosciutto thinly sliced
- Oil for cooking
Roasted Garlic Mayo
- 1/2 cup mayonnaise
- 1 bulb garlic roasted (see below for instructions)
- Pinch of salt optional
Instructions
Roasted Garlic Mayo
- Preheat your oven to 400°F (200°C).
- Slice off the top of a garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes, or until soft and caramelized.
- Squeeze the roasted garlic cloves into a small bowl and mash into a paste. Combine with mayonnaise, stirring until smooth. Set aside.
Burger Time
- Heat a drizzle of oil in a skillet over medium heat.
- Add the sliced mushrooms, fresh thyme, and rosemary. Sauté until golden brown and tender, about 4-5 minutes. Remove and set aside.
- In the same skillet, add the prosciutto in a single layer. Cook until crispy and golden, about 1-2 minutes per side. Transfer to paper towels to drain.
- In a bowl, mix the ground beef and minced shallots. Divide into 4 portions and form into balls.
- Season each ball with salt and pepper.
- Heat a skillet or griddle over medium-high heat. Place a ball of beef on the hot surface and press firmly with a spatula to flatten into a thin patty.
- Cook for 2-3 minutes per side until a crust forms and the patty is cooked to your preference.
- Spread a generous layer of roasted garlic mayo on the bottom bun.
- Add cucumber or pickle slices, cilantro, and red onion.
- Place a smashed burger patty on top, followed by sautéed mushrooms, smoked gouda, and crispy prosciutto.
- Top with the other half of the bun.

Notes
Hot sauce isn’t for everyone but if you like a little heat, try adding some of your favourite hot sauce to your smash & crunch burger for that little kick to top it off.
