Ingredients
  

  • 1 cup long-grain white rice
  • 2 tbsp chipotle in adobo paste
  • 2 cloves garlic minced
  • 1 ¾ cups chicken broth
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • ½ cup canned diced tomatoes
  • Fresh cilantro chopped, for garnish

Instructions
 

  • Optional Step: In a bowl, puree chipotle in adobo paste, minced garlic, canned diced tomatoes, paprika, cumin, salt, and pepper until smooth.
  • Rinse the rice under cold water until the water runs clear. Drain and set aside.
  • Pour olive oil into the rice cooker pot. Add the finely chopped onion.
  • If you did the optional step, add the pureed mixture to the rice cooker pot. Otherwise, add chipotle in adobo paste, minced garlic, canned diced tomatoes, paprika, cumin, salt, and pepper directly to the rice cooker pot.
  • Stir well to combine the ingredients with the onion in the rice cooker pot.
  • Add the rinsed rice to the rice cooker pot. Stir to coat the rice evenly with the mixture.
  • Pour in the chicken broth and stir everything together.
  • Close the rice cooker lid and set it to cook according to the manufacturer’s instructions for white rice.
  • Once the rice cooker completes the cooking cycle, let it sit for a few minutes before opening the lid.
  • Fluff the rice with a fork. Garnish with freshly chopped cilantro before serving.

Notes

Adobo Paste: To make your own adobo paste, blend the contents of a Chipotle in Adobo can in a food processor until smooth.
Optional Add-Ins:
  • Diced Bell Peppers: Use red, green, or yellow for added sweetness and colour.
  • Corn Kernels: Fresh or frozen corn adds a pop of sweetness and texture.
  • Black Beans or Kidney Beans: Rinsed and drained, these provide a hearty, protein-rich addition.
  • Diced Jalapeños or Green Chilies: For an extra kick of heat.
  • Sliced Black or Green Olives: For a briny contrast.
  • Mexican Oregano or Cilantro Stems: Add depth and an herbaceous note.
Optional Toppings:
  • Sour Cream or Mexican Crema: To add a creamy, tangy finish.
  • Salsa, Salsa Verde or Pico de Gallo: For extra zest and freshness.
  • Lime Wedges: A squeeze of lime brightens the dish.
  • Shredded Cheddar or Monterey Jack Cheese: Adds a rich, melty layer.
  • Crumbled Cotija Cheese or Queso Fresco: For a salty, tangy garnish.
