Making Scallion Curls
- Begin by separating the tops from the bottoms of one scallion.
- Split the greens down the middle and discard any damaged parts.
- Thinly slice the scallion into long strips. (cut with the grain)
- Fill a bowl with ice water and place the sliced scallions in it. Let them sit in the ice bath for a about of five minutes or until they fully curl.
- Once the scallions have curled, remove them from the ice water and place them on a paper towel to absorb excess moisture.
- Pat the scallions dry gently to remove as much water as possible.
- Transfer the dried scallion curls to a plate or container and refrigerate them for a while to ensure they stay curled and crispy.
- Once they are thoroughly dried and chilled, the scallion curls are ready to be used as a garnish for your dishes.
