Equipment

  • Dehydrator (optional method)
  • Spice Grinder

Ingredients

  • 6-8 ripe tomatoes Roma or any preferred variety
  • A pinch sea salt optional for enhanced flavour

Instructions

Prep

  • Wash and dry the tomatoes thoroughly.
  • Slice the tomatoes into thin rounds (about 1/8 to 1/4 inch thick). The thinner the slices, the quicker they will dehydrate.

Using a Food Dehydrator

  • Place the tomato slices in a single layer on the dehydrator trays, making sure they are not overlapping.
  • Set the dehydrator to 125°F (52°C) and dehydrate for 8-12 hours, or until the tomatoes are fully dried, brittle, and crisp.

Using an Oven

  • Preheat your oven to 170°F (77°C).
  • Lay the tomato slices on a baking sheet lined with parchment paper or a cooling rack. Ensure the slices are spread out evenly and not overlapping.
  • The Bake for 4-6 hours, checking every 30 minutes, until the tomatoes are fully dried and brittle.

To Finish

  • Once the tomatoes are fully dried and cooled, break them into smaller pieces.
  • Use a spice grinder, coffee grinder, or blender to grind the dried tomatoes into a fine powder. Grind in small batches to achieve an even consistency.
  • For added flavour, you can sprinkle in a pinch of sea salt and blend it into the tomato powder.
  • Transfer the tomato powder to an airtight container or jar. Store in a cool, dry place for up to 6 months. You can also refrigerate it for longer shelf life.
