Yes. Simply cut larger bocconcini into bite-sized pieces before marinating.

How long do they need to marinate?

They’ll have good flavour after 2 hours, but overnight is even better.

Can I use the leftover oil?

Absolutely! The herb-infused oil is delicious for salad dressings, drizzling over roasted vegetables, or dipping fresh bread.

Can I make this ahead of time?

Yes! it actually gets better after a day or two in the fridge, so it’s a good one to prep in advance.

What can I substitute for sun-dried tomatoes?

Roasted red peppers work well if you want something a little sweeter and less tangy.

Wife with the Knife
Fresh bocconcini tossed with garlic, herbs, sun-driedtomatoes, and some good olive oil. The best appetizers are the ones you barelyhave to try for. Snack it straight from the bowl, pile it on a salad, or set itout and watch it disappear.

  • Add a few strips of lemon zest for a fresh citrus flavour.
  • Stir in fresh thyme or rosemary.

Storage
  • Fridge: Store in the refrigerator for up to 4 days, or until the earliest expiration date on the bocconcini.
