Ingredients
  

  • 12 Medjool dates (pitted)
  • 4 ounces goat cheese (see notes)
  • 6 slices of thin bacon (cut in half crosswise)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • Slice open each date lengthwise and remove the pit.
  • Stuff each date with a small amount of goat cheese, filling the cavity left by the pit.
  • Wrap each stuffed date with a half-slice of bacon and secure it with a toothpick.
  • Place the bacon-wrapped dates on the prepared baking sheet, seam side down.
  • Bake in the preheated oven for 10 minutes
  • Flip the dates over to the other side and cook for an additional 10 minutes (or until the bacon is crispy and golden brown.)
  • Remove from the oven and let cool slightly before serving.
  • Serve the bacon-wrapped dates & goat cheese on their own or with your choice of dipping sauce.

Notes

  • Cheese Substitutions: You can swap the goat cheese for other options like blue cheese or feta for a different flavour profile.
  • Reheating: Before reheating, allow the bacon-wrapped dates to come to room temperature. Reheat at a low temperature (in the oven or air fryer) until warmed through, ensuring the bacon stays crisp.
  • Make Ahead Option: You can assemble the bacon-wrapped dates a day in advance and store them covered in the refrigerator. Bake just before serving for the freshest flavour and texture.
  • Serving Suggestion: These are perfect as a party appetizer, served warm or at room temperature. Pair with a drizzle of honey or balsamic glaze for a sweet-savoury twist.
