Fresh Basil Paste is a vibrant blend of fresh basil, olive oil, and sometimes garlic, offering a quick and easy way to infuse your dishes with the fresh, aromatic flavour of basil. This versatile paste can be used in pasta sauces, salad dressings, marinades, spreads, and more, adding a burst of herbaceous goodness to your cooking.

Ingredients
  

  • 2 cups Fresh basil leaves tightly packed
  • ¼ cup Extra virgin olive oil adjust for consistency
  • Salt adjust to taste
  • 1 tsp Rice vinegar optional, see note #1.
  • 2 cloves garlic minced, optional

Instructions
 

  • Wash and dry 2 cups of fresh basil leaves thoroughly.
  • Blend basil leaves with a pinch of salt, garlic and rice vinegar (if using) until smooth.
  • While the processor is running, slowly drizzle in the oil and process until finely pureed.
  • Adjust salt and vinegar to taste. Add more oil for desired consistency.
  • Transfer the fresh basil paste to a clean jar or container with a tight lid.

Notes

Vinegar Benefits: Adding vinegar to the basil paste not only enhances its shelf life by inhibiting bacterial growth but also introduces a subtle acidity that balances the richness of the basil, olive oil, and other ingredients.
Storage:
  • Refrigerator: Store basil paste in an airtight container and refrigerate for up to 1 week.
  • Freezer: For longer storage, freeze the paste for up to 3 months. Use ice cube trays for convenient portioning.
