Crying Tiger Sauce is a spicy and tangy Thai sauce that perfectly complements grilled or roasted meats. With bold flavours of chili, lime, and fish sauce, it adds a fiery kick and zesty brightness to any dish, making it a favourite for spice lovers.

Ingredients
  

  • 2 shallots minced
  • 6 tbsp fish sauce
  • tbsp sugar
  • 2 tbsp Thai dried chili peppers crushed
  • 1 tbsp rice powder/flour
  • 2 tbsp green onions finely chopped
  • 2 tbsp chopped cilantro
  • Juice of 2 limes juiced

Instructions
 

  • In a bowl, mix together minced shallots, fish sauce, sugar, Thai dried chili peppers, roasted rice powder/flour, chopped green onions, chopped cilantro, and lime juice.
  • Stir well until everything is evenly combined.
  • This sauce pairs excellently with various proteins like steak, chicken, pork, etc.

Notes

  • Make Ahead: Crying Tiger Sauce can be made ahead of time to allow the flavours to meld. Prepare it a day or two in advance for the best results.
  • Adjusting Spice Level: If you prefer a milder version, you can reduce the amount of chili or substitute with a less spicy variety.
  • Serving Suggestions: This sauce is excellent with grilled meats, such as steak, chicken, or pork. It can also be used as a dipping sauce for spring rolls or added to stir-fries for an extra punch of flavour.
