FAQ
Can I make these ahead of time?
Yes. Pre-bake the pastry shells, then assemble and bake just before serving.
Can I use a different cheese instead of Brie?
Yes. Camembert or soft goat cheese both work well.
What can I use instead of fresh figs?
Fig preserves are the best substitute.
Can I skip the prosciutto?
Of course, Leave it out or finish with flaky salt instead.
Why did my puff pastry get soggy?
Usually from overfilling, skipping the pre-bake, or letting them sit too long before baking.
Are these best served hot or cold?
Best served warm so the Brie stays soft and melty.
Chef’s Tips
- Keep pastry cold: Cold puff pastry gives the best rise and flakiest layers.
- Don’t overfill: Brie and figs release moisture keep portions small.
- Pre-bake the shells: Helps keep the base crisp after filling.
- Use thick figs or preserves: Prevents leaking during baking.
- Finish: A drizzle of balsamic glaze or pinch of flaky salt balances the richness.
