
Garlicky Coleslaw

Ingredients
Dressing
- 3-4 cloves minced garlic
- ⅓ cup grapeseed oil
- ⅓ cup apple cider vinegar
- ½ tsp Dijon mustard
- 1 tsp kosher salt
- ¼ tsp ground paprika
- ¼ tsp ground black pepper
- ½ tsp white or brown sugar
Slaw
- 1 small head of green cabbage thinly sliced
- 1 large carrot grated
- 1 sweet onion thinly sliced
- chopped fresh parsley or chives for garnish
Instructions
- In a large bowl, combine the thinly sliced green cabbage, grated carrot, and minced garlic.
- In a separate smaller bowl, whisk together the grapeseed oil, apple cider vinegar, Dijon, kosher salt, paprika, pepper and sugar until well combined.
- Pour the dressing over the cabbage and carrot mixture.
- Toss everything together until the vegetables are evenly coated with the dressing.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, give the coleslaw a final toss and adjust the seasoning if needed.
- Optionally, garnish with chopped fresh parsley or chives for added freshness and flavor.
- Serve the coleslaw as a side dish or topping with your favourite meals.
