Combining colourful tomatoes, onions, and a tangy dressing, topped with fresh parsley, it’s a dish that truly captures the essence of the season. Ingredients
  

Dressing

  • 2 tbsp white wine Vinegar or apple cider vinegar
  • ½-1 tbsp Sugar
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 2 tbsp Olive oil

Salad

  • 1 lb Cherry tomatoes halved
  • 1 Sweet onion sliced
  • ½ cup Parsley finely chopped

Instructions
 

  • In a small bowl or mason jar, combine vinegar, sugar, salt, pepper, and olive oil. Whisk or shake well to make the dressing.
  • In a large bowl, add the sliced onions and 2 tablespoons of the dressing. Mix thoroughly and let the onions marinate for 5 minutes to soften.
  • Add the halved cherry tomatoes or chopped medium-large tomatoes to the bowl.
  • Pour the remaining dressing over the tomatoes and onions.
  • Add the finely chopped parsley to the bowl.
  • Mix everything together until well combined.
  • Cover the bowl and let the tomato onion salad rest in the refrigerator for at least 4 hours before serving to allow the flavors to meld together.

  • Tomato Options: Use a mix of tomatoes for a vibrant presentation and flavour variety. Options include red cherry tomatoes, yellow grape tomatoes, or a combination.
  • Herb Choices: Enhance the flavour with fresh herbs like basil, mint, or oregano. Choose one or mix them for a layered, aromatic touch.
  • Storage: Transfer any leftover salad to an airtight container and refrigerate for up to 2-3 days for optimal taste and quality.
