
Tomato Onion Salad
This Tomato Onion Salad brings back memories of my childhood, offering a delicious reminder of simple family meals and the fresh flavours of summer. Combining colourful tomatoes, onions, and a tangy dressing, topped with fresh parsley, it’s a dish that truly captures the essence of the season. With its easy ingredients and refreshing taste, it’s perfect side for any meal.
Ingredients
Dressing
- 2 tbsp white wine Vinegar or apple cider vinegar
- ½-1 tbsp Sugar
- ½ tsp Salt
- ¼ tsp Pepper
- 2 tbsp Olive oil
Salad
- 1 lb Cherry tomatoes halved
- 1 Sweet onion sliced
- ½ cup Parsley finely chopped
Instructions
- In a small bowl or mason jar, combine vinegar, sugar, salt, pepper, and olive oil. Whisk or shake well to make the dressing.
- In a large bowl, add the sliced onions and 2 tablespoons of the dressing. Mix thoroughly and let the onions marinate for 5 minutes to soften.
- Add the halved cherry tomatoes or chopped medium-large tomatoes to the bowl.
- Pour the remaining dressing over the tomatoes and onions.
- Add the finely chopped parsley to the bowl.
- Mix everything together until well combined.
- Cover the bowl and let the tomato onion salad rest in the refrigerator for at least 4 hours before serving to allow the flavors to meld together.

- Tomato Options: Use a mix of tomatoes for a vibrant presentation and flavour variety. Options include red cherry tomatoes, yellow grape tomatoes, or a combination.
