In a small bowl or mason jar, combine vinegar, sugar, salt, pepper, and olive oil. Whisk or shake well to make the dressing.
In a large bowl, add the sliced onions and 2 tablespoons of the dressing. Mix thoroughly and let the onions marinate for 5 minutes to soften.
Add the halved cherry tomatoes or chopped medium-large tomatoes to the bowl.
Pour the remaining dressing over the tomatoes and onions.
Add the finely chopped parsley to the bowl.
Mix everything together until well combined.
