Ingredients
  

  • 1 cup Greek yogurt (full-fat for best flavour)
  • 2 tbsp Sour Cream (optional – creamier texture)
  • 1 med cucumber grated
  • 2-3 cloves garlic finely minced or grated
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice or white wine vinegar
  • 1 tbsp fresh dill finely chopped
  • ½ tsp salt adjust to taste
  • Pinch black pepper

Instructions
 

  • Peel the cucumber (optional if using thin-skinned varieties).
  • Grate it using a box grater, then place it in a clean kitchen towel or cheesecloth.
  • Squeeze out as much liquid as possible to avoid a watery tzatziki.
  • In a mixing bowl, combine the Greek yogurt, grated cucumber, garlic, olive oil, vinegar (or lemon juice), dill, salt, and pepper.
  • Stir well until all ingredients are evenly combined. Taste and adjust seasoning if necessary.
  • Cover the bowl and refrigerate for at least 1 hour to let the flavours meld together.
  • Serve chilled as a dip with pita bread, fresh veggies, or as a sauce for grilled meats like souvlaki or gyros.
