
Watermelon & Feta Salad

Ingredients
Dressing
- 3 tbsp cup extra-virgin olive oil
- 2-3 tbsp fresh lemon juice
- 1 tsp kosher salt
- ½-1 tsp Tabasco adjust to taste
- ¼ tsp freshly ground black pepper
Salad
- ½ about 5 cups seedless chilled watermelon, (cubed or balled)
- 1 cup feta cheese (crumbled)
- ¾-1 cup Kalamata olives sliced
- 1 medium sweet onion (medium diced)
- ½ cup coarsely chopped parsley leaves
Optional Add-ins
- 1-2 Lebanese Cucumbers (medium dice)
- 1 Jalapeño (small dice) for a little more spice
Instructions
- In a small bowl, whisk together the olive oil, lemon juice, kosher salt, Tabasco, and black pepper to make the dressing.
- In a large salad bowl, combine the chilled watermelon balls or cubes, crumbled feta cheese, sliced Kalamata olives, diced sweet onion, and chopped parsley leaves.
- Drizzle the dressing over the salad and gently toss to coat all the ingredients evenly.
- Serve the watermelon and feta salad immediately as a refreshing and flavourful side dish or appetizer.

- Chill Time: If you’re making the salad ahead of time, chill the watermelon and feta separately before combining.
