3tbspcup extra-virgin olive oil
2-3tbspfresh lemon juice
1tspkosher salt
½-1tspTabascoadjust to taste
¼tspfreshly ground black pepper
Salad
½about 5 cups seedless chilled watermelon, (cubed or balled)
1cupfeta cheese(crumbled)
¾-1cupKalamata olivessliced
1medium sweet onion(medium diced)
½cupcoarsely chopped parsley leaves
Optional Add-ins
1-2Lebanese Cucumbers(medium dice)
1Jalapeño (small dice) for a little more spice
Instructions
In a small bowl, whisk together the olive oil, lemon juice, kosher salt, Tabasco, and black pepper to make the dressing.
In a large salad bowl, combine the chilled watermelon balls or cubes, crumbled feta cheese, sliced Kalamata olives, diced sweet onion, and chopped parsley leaves.
