1packagepuff pastry, thawed(standard package that contains 2 sheets)
1large egg
18 oz block sharp cheddar, grated
1½tspflaky sea salt
1tspfresh thyme leaves
Optional: 1–2 tsp Dijon mustard
Instructions
Preheat oven to 400°F. Line 2 baking sheets with parchment paper.
Toss apple slices with lemon zest only. Set aside.
Cut puff pastry into 8 equal squares. Arrange into diamond shape (corner facing you).
Optional: Lightly brush center area with Dijon mustard for extra depth of flavour.
Add in:• 1 tbsp grated cheddar on the base • 3–4 apple slices • 1 tbsp grated cheddar on topDo not overfill.
Whisk egg with a splash of water.
Brush egg wash on edges of pastry.
Fold left corner over filling, then right corner to overlap.
Press firmly to seal. Crimp lightly with a fork if needed.
Brush exterior with egg wash.
Bake 20–25 minutes, rotating halfway, until:• Deep golden brown• Fully puffed• Cheese is lightly bubbling at seams
Let cool 5 minutes.
Drizzle honey in a zigzag pattern.
Finish with flaky salt and fresh thyme.
