Ingredients
1ripe dragon fruitdiced
½red onionfinely chopped
1Jalapeño pepperseeded and finely chopped
¼-½Avocadodiced, optional
¼cupfresh cilantrochopped
1limejuiced
Kosher salt
Freshly ground pepper
Instructions
In a medium bowl, combine the prepared dragon fruit, red onion, jalapeño and cilantro.
Pour the squeezed juice of one lime over the mixture.
Season with salt and freshly ground pepper to taste.
Gently toss the ingredients of the salsa together until well combined.
Taste the salsa and adjust the seasoning and acidity if necessary.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, this will allow the flavors to meld together.
Serve the chilled dragon fruit salsa as a refreshing dip with tortilla chips, (see note #2.) or as a topping for tacos, grilled fish or chicken.
Notes
Spice it up: For extra heat, replace the jalapeño pepper with one orange habanero pepper. Adjust the amount based on your spice tolerance.
Texture Variation: For added texture, consider mixing in some finely diced cucumber to complement the dragon fruit’s softness.
Serving Suggestions: This salsa pairs wonderfully with grilled fish, tacos, or even as a topping for salads or rice bowls.
Presentation Tip: Use the hollowed-out dragon fruit peels as serving bowls for a fun and decorative touch. To stabilize them, cut a thin slice off the bottom of each half, being careful not to cut too deep to avoid creating a hole. This will keep the bowls steady and prevent tipping.
Storage: Refrigerate the dragon fruit salsa in an airtight container for up to 2-3 days.
After storing, Stir the salsa well before serving, especially after storing, to redistribute the flavours.
