Ingredients

½ cup olive oil
2 tbsp balsamic vinegar
3 tbsp sun-dried tomatoes finely chopped
2-3 tbsp juicy olives roughly chopped
1 tbsp minced garlic or more, to taste
1 tsp paprika
½ tsp chili flakes
2-3 tbsp freshly grated Parmesan cheese or more
Fresh Italian parsley (or your choice of herbs) finely chopped
Flaky sea salt to taste
Freshly cracked black pepper to taste

Instructions

Finely chop the sun-dried tomatoes and olives.
Mince the garlic and parsley.
In a medium serving bowl, pour in the olive oil and balsamic vinegar. Stir to combine.
Mix in the sun-dried tomatoes, olives, minced garlic, paprika, chili flakes, freshly grated Parmesan and chopped parsley until well combined.
Sprinkle with flaky sea salt and freshly cracked black pepper. Adjust the seasoning as needed.
Transfer the dipping oil to a shallow dish and serve with warm crusty bread like Baguette, focaccia, or ciabatta.

Notes

This recipe can easily be made up to 3 days in advance.
