Ingredients
1wheel of Brie cheese8-12 oz
1cupgrapesred or green, halved
1tbspolive oil
2-3sprigs fresh thymeplus extra for garnish
1tbsphoneyoptional
Salt and freshly cracked black pepperto taste
Crackers, baguette slices, or fresh bread, for serving
Instructions
Preheat your oven to 350°F (175°C).
Place the grapes on a baking sheet.
Drizzle with olive oil and season with a pinch of salt and freshly cracked black pepper.
Scatter fresh thyme sprigs over the grapes.
Roast in the oven for about 10–12 minutes, until the grapes soften and begin to caramelize.
While the grapes are roasting, place the Brie cheese on a baking dish or parchment-lined baking sheet.
Score the top of the Brie with a sharp knife, cutting a few shallow slits across the top (this will help the cheese melt evenly).
Once the grapes are ready, place the Brie in the oven and bake for 10-12 minutes, or until the cheese is soft and gooey.
Once the Brie is melted and the grapes are roasted, remove both from the oven.
Drizzle the Brie with honey (if using) for a touch of sweetness.
Serve the warm Brie with the roasted grapes, garnished with extra fresh thyme.
