Oven Method

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or tinfoil.
In a large bowl, combine the olive oil, paprika, garlic powder, salt, and pepper.
Add the salmon bites to the bowl and toss gently to coat evenly with the seasoning.
In a separate bowl, mix the mayonnaise, Thai sweet chili sauce, Sriracha, and a drizzle of sesame oil.
Pour half of the Bang Bang sauce into a separate bowl and reserve for drizzling after cooking. Toss the salmon bites in the remaining sauce.
Arrange the seasoned salmon bites in a single layer on the prepared baking sheet (do not brush with Bang Bang sauce until after baking).
Bake for 16 minutes, flipping halfway through, or until the salmon reaches an internal temperature of 145°F.
Serve the salmon over rice, drizzle with the reserved Bang Bang sauce, and garnish with chives, sesame seeds, and optional hot peppers.
Serve extra Bang Bang sauce on the side for dipping.

In a separate bowl, mix the mayonnaise, Thai sweet chili sauce, Sriracha, and a drizzle of sesame oil.

Working in batches, place the salmon bites in a single layer in the air fryer basket (lining with parchment or tinfoil for easier cleanup, if desired).
Air fry for 4-5 minutes, flip the salmon, and cook for another 4-5 minutes, or until the salmon reaches an internal temperature of 140-145°F.
