Sometimes the simplest things are the best. Light, creamy and just sweet enough, strawberries & cream croissants are a quick little treat made with a buttery croissant, fluffy vanilla Chantilly cream, and fresh strawberries. Ready in minutes, they taste like something you’d grab at a cozy café.
Using a serrated knife, slice the croissant in half and set aside.
Rinse the strawberries and pat them dry. Remove the tops and slice into thin pieces.
In a medium bowl, combine the whipping cream and vanilla extract. Sift in the icing sugar.
Using a handheld mixer, beat on medium speed for about 1 minute until slightly thickened. Increase to high speed and beat 1–2 minutes more, until stiff peaks form.
Transfer the whipped cream to a piping bag (if using).
Place the bottom half of the croissant on a plate. Pipe the Chantilly cream generously over the croissant.
Layer the sliced strawberries on top, slightly overlapping them.
Place the top half of the croissant over the strawberries.
Dust lightly with icing sugar and serve immediately.

No piping bag? Simply spoon the whipped cream onto the croissant.
Extra indulgent: Add a drizzle of chocolate or honey.
Sweetness: Add a little extra icing sugar if you prefer a sweeter cream.
