Vietnamese Nuoc Cham Dipping Sauce (Nước chấm)
A good nước chấm can make just about anything taste better. This classic Vietnamese dipping sauce is light, bright, salty, sweet, and packed with flavour. It takes only a few minutes to stir together and is perfect for dipping spring rolls, spooning over grilled meats, or drizzling onto rice and noodle bowls. Simple ingredients, big flavour, and a recipe you’ll come back to whenever a meal needs a little extra something.
Ingredients
- 2 tbsp + 2 tsp fish sauce
- 2 tbsp fresh lime juice about 1 lime
- 4-6 tbsp tbsp water 4 for stronger flavor, 6 for lighter
- 1 tbsp sugar
- 3-4 cloves garlic finely minced (optional)
- 1-3 Thai chiles thinly sliced, adjust to taste (optional)
Instructions
- In a small bowl, combine fish sauce, lime juice, water, and sugar. Stir well until the sugar fully dissolves.
- If needed, use a splash of slightly warm water to help the sugar dissolve faster.
- Add garlic and Thai chiles if using. Stir to combine.
- Taste and adjust balance:• More lime for brightness• More sugar for sweetness• More fish sauce for saltiness
- Let sit 10–15 minutes before serving so the flavours meld.

Storage
- Fridge: Store in an airtight container for up to 2–3 weeks
- Freezer: Not recommended, the citrus and garlic will lose quality
- Serving: Serve cold or at room temperature.
