Can I make these ahead of time?

Yes. Assemble and refrigerate for a few hours before baking. Bake fresh for best texture.

Why did my bundles open while baking?

Usually overfilling or weak sealing. Press edges firmly and use egg wash properly as glue.

Can I reheat them?

Yes. Reheat in a 300°F oven until crisp again. Avoid microwaving.

What apples work best?

Honeycrisp is ideal. Gala or Pink Lady also work well.

Flaky, buttery puff pastry wrapped around tender apple slices and sharp cheddar, baked until golden and finished with a glossy honey drizzle, flaky salt, and fresh thyme. Sweet, savoury, crisp, and gone in minutes.

Equipment

  • 1-2 Baking trays (depends on size)
  • Parchment Paper
  • Grater (for cheese)
  • Pastry Brush

Ingredients
  

  • 2 medium Honeycrisp apples (cored and sliced ⅛” thick)
  • 1 lemon (zest)
  • 6 tbsp honey (divided)
  • 1 package puff pastry, thawed (standard package that contains 2 sheets)
  • 1 large egg
  • 1 8 oz block sharp cheddar, grated
  • tsp flaky sea salt
  • 1 tsp fresh thyme leaves
  • Optional: 1–2 tsp Dijon mustard

Instructions
 

  • Preheat oven to 400°F. Line 2 baking sheets with parchment paper.
  • Toss apple slices with lemon zest only. Set aside.
  • Cut puff pastry into 8 equal squares. Arrange into diamond shape (corner facing you).
  • Optional: Lightly brush center area with Dijon mustard for extra depth of flavour.
  • Add in:
    • 1 tbsp grated cheddar on the base
    • 3–4 apple slices
    • 1 tbsp grated cheddar on top
    Do not overfill.
  • Whisk egg with a splash of water.
  • Brush egg wash on edges of pastry.
  • Fold left corner over filling, then right corner to overlap.
  • Press firmly to seal. Crimp lightly with a fork if needed.
  • Brush exterior with egg wash.
  • Bake 20–25 minutes, rotating halfway, until:
    • Deep golden brown
    • Fully puffed
    • Cheese is lightly bubbling at seams
  • Let cool 5 minutes.
  • Drizzle honey in a zigzag pattern.
  • Finish with flaky salt and fresh thyme.
  • Serve & Enjoy!

Notes

  • Apples release moisture as they bake—keep slices dry and thin
  • Overfilling is the main reason bundles open or leak
  • Thyme should always be added after baking for best flavour
  • Best eaten warm while pastry is crisp and flaky

 

Variations

  • Smoked Cheddar Twist: mix sharp and smoked cheddar (70/30)
  • Bacon Add-on: top with crispy bacon crumbles after baking
  • Nutty Crunch (optional): chopped toasted pecans for texture
  • Party / Snack Size: You can cut the puff pastry into smaller squares for bite-sized versions. Just reduce the filling slightly and bake until golden and puffed.
 

Storage (best eaten fresh.)

  • Fridge: Store in an airtight container in the fridge for up to 3 days.
  • Reheat in an oven at 300°F until crisp and warmed through.
