Shrimp Scampi Capellini

FAQ
Can I use a different pasta instead of capellini?
Absolutely. Capellini is light and delicate, but spaghetti, linguine, or angel hair pasta also work well.
Can I use frozen shrimp?
Yes. Thaw completely and pat dry before cooking so the shrimp sear instead of steaming.
Can I make this ahead of time?
It’s not recommended, shrimp pasta is always best served fresh.
Chef’s Tips
- Cut larger shrimp into bite-sized pieces so every forkful gets shrimp instead of having large pieces sitting on top.
- Don’t overcook the shrimp. A quick sear followed by a gentle finish keeps them tender.
- Capellini cooks quickly and absorbs sauce fast, so keep extra pasta water nearby to loosen the sauce if needed.
- Add the lemon juice at the end to keep the flavour fresh and bright.
- If using Parmesan, add it off the heat for a smoother finish, or just as a garnish.
